The times are real
In most catalogues cooking time is whatever the author guessed, and fifteen minutes becomes forty. Here it is worked out from the steps themselves — the durations written inside them, added up. A recipe that says "simmer for 25 minutes" cannot claim to take twenty.
Some recipes carry a measured time instead: someone cooked the dish and timed it, and that number replaces the calculated one.
Quick does not mean thin
